蘇Good II 卤水乳鸽

 
卤水汁滚方加糖,否则糖会焦底
 
乳鸽飞水后用冷水冲洗清理内脏,要清除脖子附近食袋内鸽子消化不掉的食物残渣。
 
卤水汁可冷冻后继续用,记得撇去表面脂肪层,但还是要准备一个新的卤水袋子用小锅子煮半个钟,然后倒进卤汁锅中。
